Vegan BBQ Feast: Grilled Portobello Burgers, Corn on the Cob, and Grilled Peaches

Switching to a plant-based diet doesn't mean you have to miss out on BBQ season. Here, we share a delicious and hearty vegan BBQ feast that even non-vegans will love.


Juicy grilled portobello burgers on a BBQ

Grilled Portobello Burgers

Ingredients

  • 4 large portobello mushrooms

  • 1/4 cup olive oil

  • 3 tablespoons balsamic vinegar

  • 2 cloves garlic, minced

  • Salt and black pepper to taste

  • 4 vegan burger buns

  • Vegan mayonnaise, lettuce, tomato, and pickles for serving

Instructions

  1. In a small bowl, whisk together olive oil, balsamic vinegar, minced garlic, salt, and black pepper. This will be your marinade.

  2. Place the portobello mushrooms in a shallow dish and pour the marinade over them. Let them marinate for at least 15 minutes, turning occasionally.

  3. Preheat your grill to medium-high heat.

  4. Grill the marinated portobello mushrooms for 5-7 minutes on each side, until tender and charred.

  5. Assemble your burgers: spread vegan mayonnaise on the buns, add lettuce, a grilled portobello, slices of tomato, and pickles.

  6. Serve immediately and enjoy your delicious vegan BBQ burger!

BBQ Corn on the Cob

Ingredients

  • 4 ears of corn, husks removed

  • Vegan butter

  • Salt and chili powder to taste

Instructions

  1. Preheat your grill to medium heat.

  2. Brush each ear of corn with vegan butter.

  3. Grill the corn, turning occasionally, for about 10 minutes or until the kernels are tender and charred.

  4. Season the grilled corn with salt and chili powder.

  5. Serve the corn as a wonderful side to your BBQ feast!

Grilled Peaches Dessert

Ingredients

  • 4 ripe peaches, halved and pitted

  • 1 tablespoon olive oil

  • Vegan vanilla ice cream

  • Fresh mint leaves for garnish

Instructions

  1. Preheat your grill to medium heat.

  2. Lightly brush the cut side of each peach half with olive oil.

  3. Grill the peaches cut-side down for 5-7 minutes, or until the peaches are tender and have nice grill marks.

  4. Serve the grilled peaches with a scoop of vegan vanilla ice cream and garnish with fresh mint leaves.

  5. Enjoy this sweet end to your vegan BBQ feast!
