Sweet Potato Brownies with Peanut Butter Frosting


For the brownies:

  • 1 large sweet potato, cooked and mashed

  • 1/2 cup almond flour

  • 1/4 cup unsweetened cocoa powder

  • 1/4 cup maple syrup

  • 2 tablespoons coconut oil

  • 2 eggs

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon baking soda

  • 1/4 teaspoon salt

For the frosting:

  • 1/2 cup natural peanut butter

  • 1/4 cup maple syrup

  • 1/4 cup coconut oil

  • 1/2 teaspoon vanilla extract

  • pinch of salt


  1. Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.

  2. In a mixing bowl, combine the cooked and mashed sweet potato, almond flour, unsweetened cocoa powder, maple syrup, coconut oil, eggs, vanilla extract, baking powder, baking soda, and salt. Mix well until smooth.

  3. Pour the batter into the prepared baking pan and spread it out evenly.

  4. Bake for 25-30 minutes or until a toothpick inserted into the center of the brownies comes out clean.

  5. Remove from the oven and let cool completely before adding the frosting.

  6. In a small mixing bowl, combine the peanut butter, maple syrup, coconut oil, vanilla extract, and salt. Mix well until smooth and creamy.

  7. Spread the peanut butter frosting over the cooled brownies, then place them in the fridge for at least 30 minutes to set.

  8. Once the frosting is set, remove the brownies from the fridge, slice into squares, and enjoy!
