Healthy Cookie Dough Recipe

Ingredients:
1 1/2 cups of chickpeas (canned, drained, and rinsed)
1/4 cup of almond butter
1/4 cup of honey or maple syrup
1 teaspoon of vanilla extract
1/2 teaspoon of salt
1/2 teaspoon of baking soda (just for flavor, we aren't baking it)
1/3 cup of dark chocolate chips
Instructions:
Rinse and drain the chickpeas. Remove the skins by gently pinching them between your fingers. This step is optional but will yield smoother dough.
In a food processor, combine the chickpeas, almond butter, honey or maple syrup, vanilla extract, salt, and baking soda. Blend until the mixture is smooth.
Transfer the cookie dough to a mixing bowl. Fold in the dark chocolate chips.
Serve immediately for a softer, dough-like consistency, or refrigerate for an hour for a firmer texture.
