1 1/2 cups of chickpeas (canned, drained, and rinsed)
1/4 cup of almond butter
1/4 cup of honey or maple syrup
1 teaspoon of vanilla extract
1/2 teaspoon of salt
1/2 teaspoon of baking soda (just for flavor, we aren't baking it)
1/3 cup of dark chocolate chips
Rinse and drain the chickpeas. Remove the skins by gently pinching them between your fingers. This step is optional but will yield smoother dough.
In a food processor, combine the chickpeas, almond butter, honey or maple syrup, vanilla extract, salt, and baking soda. Blend until the mixture is smooth.
Transfer the cookie dough to a mixing bowl. Fold in the dark chocolate chips.
Serve immediately for a softer, dough-like consistency, or refrigerate for an hour for a firmer texture.
Enjoy this healthy edible cookie dough with a spoon, or use it as a dip for fruit or crackers. You can also roll it into balls for bite-sized treats!
This cookie dough is packed with fiber from the chickpeas and healthy fats from the almond butter, and it's sweetened with natural sweeteners like honey or maple syrup. The dark chocolate chips add some antioxidants and a satisfying crunch. Enjoy!
